
Asparagus in the Oven or on the Grill
(Makes 3 to 4 servings)
1 bunch fresh asparagus
canola oil
salt
pepper
Parmesan cheese
Wash the asparagus and trim away any tough ends.
Dry the asparagus and place in flat dish. Trickle a little canola oil over the spears. Toss the spears to coat each one with oil. Sprinkle with salt and pepper and toss again.
Oven: Preheat the oven to 350° F (176° C). Line a baking sheet with parchment paper. Place the oiled asparagus on the paper. Bake for 5 to 7 minutes or until just tender. Remove from the oven, place on a serving dish and grate Parmesan cheese over top.
Grill: Preheat the grill to 350-450°F (175-230° C.) Place the oiled asparagus spears directly on the grill, side by side across the grate to prevent them from falling through. Grill for 2 to 3 minutes on each side with the grill lid open. Remove the asparagus to a serving dish and grate Parmesan cheese over top.
