(Makes 6 to 8 servings)

 

1 medium-large head of cabbage

2 tablespoons (30 ml) butter

Dash salt

Dash pepper

 

Peel away and discard the outer leaves of the cabbage.

Make a slice across the bottom of the cabbage in order to create a flat surface. Cut off any core jutting out from the top of the cabbage.

Cut into the cabbage, at the top, approximately 2 inches below the surface of the core, on an angle with the knife pointing toward the core. Remove the cut cone. Cut around the core to create a hole that is approximately 1 1/2 to 2 inches deep.

Squeeze the butter into the hole. Sprinkle salt and pepper over the butter and the top of the cabbage.

Preheat the smoker to 250° F (120° C). Smoke the cabbage for 2 1/2 hours.

Turn the heat to 300° F (150° C) and cook for 2 1/2 hours or until the cabbage is tender.

Remove the charred outer leaves, cut the cabbage into wedges, and serve.
